It’s often mixed at lower ratios of 5-20% of total flour with higher gluten flours like our Strong Bakers for bread or All-Purpose for pastries. Great for bread, crackers, cookies, cakes, muffins, pancakes, waffles, and pie crusts.
This Dark Rye flour is 100% whole grain flour, is an ancient grain that thrives in cold and wet climates. Due to its fine milling grade, it is coarser than white flour. It is heavier than traditional flours and lends its density to baked goods. In recent years, artisan bakers are incorporating rye flour it into their pastry and bread bakes for its unique tangy flavour, increased nutritional content, and low gluten content.
