This Dark Rye Flour is 100% whole grain flour, and is an ancient grain that thrives in cold and wet climates. Due to its fine milling grade, it is coarser than white flour. It is heavier than traditional flour and lends its density to baked goods. In recent years, artisan bakers are incorporating Rye flour into their pastry and bread bakes for its unique tangy flour, increased nutritional content and low gluten content.
